Why Wheat flour?


abstract:Productivity of wheat  in Indonesia has declined and the price is increased, so as to meet the needs of the domestic industry especially for the manufacture of cereals and biscuits, the country of Indonesia has to import from other countries. Increased variety of cereal and biscuit products cause scarcity of the raw material include the wheat flour, that is caused due largely derived from wheat flour. Consequence from this reason, the country of Indonesia requirement the wheat flour 100 % comes from imported supplies. Almostly needs of the wheat flour 50 % imported from Australia, China, Canada and the United States. Banana heart flour can be used as an alternative solution to overcome the scarcity of wheat in Indonesia. Banana heart flour has the advantage of a complete nutrient content in the form of calcium, carbohydrates, phosphorus, and vitamins A, B, and C. The main characteristics of the banana heart flour granules are oval -shaped, with very low levels of HCN, it is water level can be lowered to about 6 %, the texture of the pasta and the nature of the film either category. The flour not only high-quality products, but also can solve the environmental pollution resulting from agricultural waste from the Banana heart. Nutritional quality of the Banana heart flour almostly comparable with wheat flour, thus  this is can be a solution to the scarcity of wheat flour in the manufacture of biscuits and cereals in Indonesia .
